Valentine bites … Strawberry Shortcake

Strawberry Shortcake goes to follow her dreams in the movie Sweet Dreams making her an ideal Valentine choice and I am today making a simple and straightforward Valentine treat for those who want to make something at home rather than use shop-bought and don’t have the time to spare after a busy work week.

These are shortcake squares laced with chopped fresh strawberries and topped with dark chocolate.

The difference between shortcake and shortbread is that shortcake has the texture of a scone (biscuit in USA) and shortbread is more like a cookie. They are ‘short’ because of the large amount of shortening that was used and of course we have replaced this with butter nowadays giving Strawberry Shortcake a good old-fashioned flavor and texture….

You will need:

2 cups flour
1 tablespoon baking powder
Pinch of salt
3 tablespoons sugar
1 stick butter
3/4 cup milk
1/3 cup strawberries, chopped and drained

1 packet dark chocolate buttons
1 spoon strawberry jam which makes the topping very glossy
1 spoon vegetable oil

Rub the butter into the sifted flour until it resembles fine breadcrumbs.
Add the baking powder, salt and sugar and mix in.
add the chopped strawberries.
Mix in the milk, a little at a time using a knife to combine it.
Form into a dough let it stand for a few minutes but not any more than that,
Put the dough into a rectangular tray of about 6 by 12 inches that is greased or covered with baking paper.
Pat the dough with your fingers until it covers the surface. Flatten surface to make it even.
Brush with milk and bake at 175 C for about 10 to 15 minutes, making sure it does not brown.

For the topping. Melt the buttons in a bow in the microwave on 30 seconds at a time, take the bowl out each time and stories it, When it has melted, add oil and stir in and finally the heated up strawberry jam and stir.

Cut up the shortcake into small neat squares and dip each one into the melted chocolate.
To give them a valentine touch, I decorated each square with a pink sugar heart.
