The simpliest things are always best. This is not my recipe, I do not know who really came up with such a great idea and it works and a huge credit to who ever came up with it first. I read about frozen banana ice cream on various sites and blogs and tried it out for the first time this week.
It does what it says it promises. Creamy banana ice cream, one ingredient, frozen bananas. Incredible, no added sugar, gluten free and you can make it in the comfort of your home knowing exactly what has gone into it.
I made one using lemon Loacker wafers to garnish. I did squeeze some fresh lemon with the bananas before feeezing, but without also produces a fantastic result.
You will need:
juice if 1/4 lemon
Loacker Lemon wafers for garnish.
Make sure you use ripe bananas. Cut them up and freeze them in a bowl. Squeeze the lemon juice all over. When they have frozen, take them out and blend, using a food mixer or hand blender, not a liquidizer. The bananas will break down and then become very creamy with the consistency of ice cream.
I used a piping bag to pipe into decorative glasses and garnished with a Loacker lemon wafer but you can simply spoon in. You can either serve it as it is or refreeze it for half an hour to solidfy more and serve.
