Gingerbread men and ginger cupcakes

I made gingerbread men with Sara and the kids and it was such fun.  We followed easy straight forward recipes that the kids managed with minimal help and they are only 7 years old and 3 :).

I reduced the ginger content to adapt it for the kids. Two recipes with this post, useful this month I’m sure …

For the gingerbread men you will need:

350g flour
1 teaspoon bicarbonate of soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon mixed spice
125g butter
175g brown sugar
1 egg
3 tbsp golden syrup

We did not have time to decorate them yesterday !

Preheat oven to 160 C

Sift the flour and add the butter cut up into small pieces. rub the bitter into the flour. Add the bicarbonate of soda, ginger, mixed spice and cinnamon. Mix. Stir in the beaten egg, mix with a forn then the golden syrup and bid together to form a dough. Wrap and refrigerate for 1/2 hour.
Roll the dough out to a 0.5cm thickness on a lightly floured surface. Use gingerbread men cutters to cut out the cookies and place on the baking tray covered with baking parchment. Leave a gap between them.
Bake for 15 minutes until they turn light golden-brown. Leave on the tray for 10 minutes before removing them. Decorate if you have time, otherwise dust with sifted icing sugar.

For the all-in-one ginger cupcakes you will need:

120g butter
120g golden syrup
250g self raising flour
1 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon mixed spice
1/2 teaspoon ginger
175g sugar
150ml milk
3 eggs beaten

Place paper cases in the muffin tin. we made 24 cupcakes with this recipe. Pre-heat oven to 160 C

Put butter and golden syrup ina small saucepan and melt over a low heat, stirring occasionally. Remove from heat
Sift flour, add all of the other ingredients into a large mixing bowl. Add the cooled down butter mix and beat eggs. Mix in until it appears consistent but do not overmix.
Pour the batter into the prepared tin and bake for 20 minutes until they are firm to the touch. Allow to cool in the tin for 10 minutes before taking out the cupcakes.
