Lea is a writer, broadcaster and chef. Her work appears on a wide range of local and international publications in both English and Maltese.

She champions local farming and sustainable agriculture and the use of fresh local produce.  This is evident in her work and whenever possible food is cooked fresh, every day and is left as close as possible to its natural state.

‘I live on a tiny island in the heart of the Mediterranean blessed with so much.  An island where the sun shines nearly every day of the year, an island surrounded by the bluest sea.  Food is naturally abundant and the sun brings out the best flavors in  everything. I like to use fresh locally sourced ingredients. I believe in freshly cut where possible, from the tree straight into the pan with as little manipulation as possible. This makes a huge difference and retains the natural flavors as they are meant to be.’

I specialize in developing recipes and I am currently working on a line of jams, chutneys, preserves and gourmet foods using local fresh fruit and Mediterranean produce. I, too, have been living in the Mediterranean in Morocco since last April and have not eaten such good and wholesome food since I was a child growing up on a farm where we grew our own.     First of all I want to congratulate you on the wonderful recipes you publish every week in “Escape”. I have tried several of them till now and always came out very satisfactory. However, I have one minor request: Can you please cause the printers to change the colour of the boxes containing the ingredients? The green background sometimes makes the wording illegible. Thank you.

  11. Namaskaram Lea, just to thank you for following my own blog now. I am happy indeed, especially since I see a couple of mutual ‘friends’ on your site, people I admire a lot.
    As you must have read, I will post mainly what we eat in our own house, foreign recipes but of course INDIAN as well. Tasty, nice and easy – our own daughters friends following – they are learning here now that they are all grown up with homes and husbands! of their own:):)
